This is a double edged proposal. On one hand, it’s near impossible for people who have sodium restricted diets to keep their diets within the guidelines. I struggle with that daily taking care of my dad as there is so few low salt or no salt prepared products to work with. I expend an enormous amount of time having to prepare from scratch using a combination of fresh and low sodium products.
On the other hand, manufactuers aren’t stupid. The industry fully knows that popular opinion aside, most people prefer saltier products and conflate better flavor with a saltier product despite claiming the opposite. Higher salt concentration also promotes eating more..(potato chip effect). If the industry is going to be required to scale back sodium on the numbers, enhancers such as MSG or wheast products will be added in greater quantity to make up the difference. MSG is a significant source of sodium too, but not in the amount as pure salt. Whenever MSG is removed from a commercial preparation as a marketing ploy, salt is usually increased to make up the difference in flavor. The opposite will occur if the proposals become mandatory. Product preference is directly related to perceived salinity.
