I usually go with no cheese, as I find that cheese neutralizes (takes away) some of the good grilled taste of the meat. Once in a while, I like a single thin slice of mild white American cheese. Mild because it does not take too much away from the burger meat flavor. White because it’s what I grew up with. Rhode Island, or perhaps it was much of new England in general did not have those orange/yellow colored cheeses, and I have yet to find those cows putting out orange/yellow milk. [B)]
Burgers that have lots of cheese, especially strong cheeses … I view the same way as I view barbeque with lots of goopy sauce.
Exactly! Except for Blue of course which adds a new dimension without taking away from the taste of the meat.
