What fun !!  I ran a large pizza business for years and it was more fun than any job I ever had.  This looks like even more fun.  Staying on the “stage” (trailer) to make the pizza could be a big attention getter for the right showman or showwoman.  It could be called “The Flying Pie”…you could have a sliding board type thing to slide the pie down from the upper area, right into the hands of the customer….slide slide slide.. $ – $ – $ !!! That oven would also do some gorgeous roasted garlic in that oven….smear it all over the dough first before adding any toppings or garlic……Yummmm
