It’s not so much what I put on the eggs, but in. I roast serrano peppers (2), diced, and chop some green onion, then scramble that. On top, fresh ground black pepper, some grated Cheddar (although American slices can be good too), and a Louisiana style (NOT Mexican) hot sauce.
