That does sound good! Do you use yellow mustard? and would you clarify a little bit on what you’re doing with foil.

I put mine on a rack in a roasting pan with water just under the rack slathered with mustard and the included spices at 325� for at least 4 hours. Take the foil off and ramp the oven to 400� for 45 minutes or less stopping when you get some color change. We eat this maybe 4 times a year plus the leftovers the next few days. We also eat at Jake’s and McBob’s several times a year although at Jake’s, it’s always pastrami for me.
