Before you put in a pound or two of habaneros (after figuring out the meat quantity) in to the pot, add ONE OR TWO peppers at a time. You can always add more but you can never take the heat out.
Also cook the chili a bit after each addition of habaneros because as they cook, they get hotter because the chili is reducing.
Start small.
