HAHAHA, i’d like to meet the health inspector who says you can HOLD raw meat on a hot dog cart… FOR ONE, you WILL NOT & CAN NOT get a HIGH PRIORITY license for an OPEN AIR hot dog cart. You won’t have the ability to keep it at 42 degrees or lower, unless you have a refrigeration unit on your cart, a triple sink + a hand washing sink, and serv safe cert as well.   but non of that is relevent, b’/c it’s a hot dog cart….  I’m going to call the Health Dept in Hastings tomorrow and ask if they allow raw red meat on a hot dog cart.
