Hey ICM, how the battle buddy. I’m happy you found a sausage that works well in you operation. There are a few sausage that would work ok in steam, or water. I think you saw the difference with the Italian sausage, the water didn’t do anything in cooking and heating the spices and fats in the sausage. When you dry cook on a grill/BBQ these spices and fats heat up better and give a great taste………..Good luck my friend…………..Billyb
