Business plans are like the essay on a final exam. Get your tally, list your expenses, and your P & L then manipulate the numbers and percentages so that on paper your making about 50% more then you need to repay the loan after expenses.
I agree you should stick with one size dog and sausage. I would price them plain and topped. If business is brisk you do not want to start haggling over toppings.
