well darkwhite, this is what i have found. your customers will tell you exactly what they want. try it, see if it works and either keep doing it or switch. they will ask for things you don’t have or not buy things you do.
i want to switch to selling one size dog in the worst way, i tried but i can’t. it’s so much easier to deal with as little as you have to on a cart, mainly due to space. many of my customers are broke and want a cheap dog which i can do with the small 8/1 for $2. many others are set on the bigger 5/1 meat which i can get a little more for $2.50. i have learned to keep the little dogs at home for most events and get $3 for the 5/1.
my suggestion is to decide what size bread you will use and get meat to match. you can hold a dog for awhile. sealed, frozen dogs will last longer then us put together, but the bread goes pretty quick. do you want to try to manage different breads? i don’t, but some do. i’ve seen people pay $8 for a giant sausage on a giant roll. you would have to figure your relative profit. trying to manage big stuff and lose bigger buns. any bun you lose goes into the red column.
people in Jacksonville, Florida have not purchased many hot dogs from me in the cold, but i don’t have heavy foot traffic. for the record, i am currently crazy and broke.
