Thanks for your input. I was hoping to minimise fuss by only boiling my dogs, so it wouldn’t work for sausages here which need to be fried or grilled. I also want to try and remain relatively apart from local traditions, but I’ll certainly be quizzing my US customers on what they would like to see and try to offer it, if feasible. I might even try to offer a pre-order service (maybe through twitter?) if they want something enough and it is profitable for me to supply it.

Not so fast with the sausages. I faced the same problem. Let’s not talk boiled but steamed. I found a sausage that turns a nice colour when steamed and they taste amazing. Get this, they will hold in steam at 160 F for 3 hours, they still retain their snap and flavour. My customers are raving about them. They tell me they are as good as any cart dog they have ever had.
