Our neighborhood does not have gas, so I am limited to electric, but how I longed for a nice blue flame below my pots and pans, but no more.  I recently replaced a glass top electric range with a GE Induction, and I can’t believe the difference it makes.  Water boils in a fraction of the time of what it takes on Wolf range my parents have (which is much faster than my mother-in-law’s Viking).  The only drawback is that several of my pots and pans are not ferromagnetic and require the use of a special plate to use (this is an issue mostly for my wife since these are her favorite pots).  Now time to replace my old ill behaved dishwasher.
