If you do not have a steam table, a simple chinese steamer on a propane hot plate will do the job. You can stack these up to about 8 high, they are available in stainless rather than the traditional bamboo. So are you doing yours with the Danish crunchy onions as a topping? Every time I’m in Singapore I stop by a Danish hot dog stand near my hotel, they have this neat little rotary dispenser that sprinkles the dog with the crunchy onions. Love em!
