Olive oil ice cream– The version I had tasted like lightly sweetened vanilla with a touch of fruity olive. Fine, but not incredible.

Thyme ice cream– This was slightly sweet and very pleasant, made with fresh thyme as well as a thyme-based liqueur. I’d have it again.

Carrot ice cream– Delicious. Considering carrots can be cooked with brown sugar and made into puddings, this shouldn’t have seemed so strange to me–but I just never thought of carrots that way before. It was not too sweet, and had the rooty earthiness of fresh carrot without being too pungent.
