Winterize now if your going to make a go of it. Tank heaters and heat tape on everything that might freeze.
I had a rough time of it last winter, having only been open for 3 months before it hit. This year I have a good following, things will slow down because people don’t want to deal with the snow and wet…but I think I have enough regulars this year to carry me through.
Temps have dropped from 100 to 70’s…people are looking for soup again. Started changing up my specials to more hearty dishes….now is the time to get them hooked …. what’s more comforting than a plate of short ribs braised in ale with wild mushrooms… served over roasted garlic mashed potatoes, made with plenty of heavy cream & butter?… Don’t know about your customers tastes, but I’m in cattle country….all they want is meat & potatoes.
Started doing breakfast a few weeks ago, burritos, sands & biscuits & gravy. Big burritos in a 14″ tortilla…potato, egg, cheese, fresh salsa and choice of ham, bacon, sausage or chorizo,,,,GOOD biscuits & gravy.. plenty of sausage in the gravy, and made with 1/2 & 1/2….nice and rich. I have been told many times already that my b&g are better than any other place in town…..had a guy come in Thursday, said that a bunch of people were talking me up in the tavern, had to try the b&g…came back Friday for more!
