I am explosively allergic to a certain preservative called modified potato starch. I know it’s called a few other things, but it tears me up and acts very quickly.
I have to be careful at restaurants and give myself a few minutes after eating to make sure I can be more than a minute away from a restroom. Yes, it’s that bad.
And the worst part is, I cannot nail down the exact name or collection of names. One doctor told me “sulfiting material” and that seems like a good start.
There’s a company that cans butter beans with something similar and it’ll mess me up. Spam does, too.
I read labels. If you can eat whatever and not get sick, more power to you. Me? I read the darn things because I know what can happen if I don’t.
