With only one night at Williamsburg, I would make the most of it and try for one of the historical taverns. I remember Chownings Tavern as a good choice. If all the historic taverns are booked or simply not your thing, try the Williamsburg Lodge or the more formal Williamsburg Inn. With just one day, you may just as well make it memorable.
