This isn’t an unusual way to make it but if I’m roasting pork loin it instead of braising it, we like the maple flavor in the fall.
MAPLE-MUSTARD GLAZED PORK ROAST
2 to 3 pound boneless pork loin roast
2/ 3 cup maple syrup
3 Tbs. Dijon-style mustard
2 Tbs. cider vinegar
2 Tbs. soy sauce
Salt and pepper
1 pound carrots, pared and quartered lengthwise -*
4-6 medium red potatoes, scrubbed and halved
* Other favorite vegetables can be substituted: Brussels sprouts, winter squash wedges, sweet potatoes, etc.
Stir together syrup, mustard, vinegar and soy sauce. Add salt and pepper to taste. Spread evenly over pork roast and place in a shallow pan, surrounded by carrots and potatoes. Roast in a 350 degree oven until internal temperature of center of roast reaches 150-155 degrees and vegetables are tender, about 45 min. to 1 1/4 hours. Remove from oven and slice roast to serve with vegetables. Serves 6 with leftovers.
