Minnesotans are eating more Vietnamese than Swedish. You are seeking out rare gimmick foods not standard everyday restaurant foods. The only regional Minnesota food that you are going to find in a casual stop at a road food type establishment with a better than 50-50 chance is a walleye sandwich. They are just about on everyone’s menu and when you cross the border to the south in Iowa they are replaced by catfish and east into wisconsin, perch or whitefish.
I enjoy Vietnamese when I’m out on the West Coast ie- San Fran, Portland, Seattle, ect, I just find no reason to have it in Minnesota.
I find many Scandinavian delicasies delicious, and I think its a shame that so many Minnesotans are embarrassed or ashamed of their cultural heritage [V](yes I really think this and nothing is going to change my opinion on that) they can’t even admit that they have an accent.
Many Roadfooders on the forum have commented previously that finding these items in Minnesota are not uncommon at all, it’s just that it’s easier to find them in the small towns versus the Twin Cities
