Lemme see, the long hours, working all nights, holidays, weekends, the excrutiating heat, the cooks that don’t show up, equipment that breaks down, etc. etc. Oh joy!

For me, the pay was phenominal. You can show off your artistic abilities. And the instant gratification is when the wait staff comes in the kitchen with a plate that looks like it was licked clean and says, "They didn’t like it!"
