Man oh man, Scorereader, you’re a tough act to follow w/ those scrumptious pictures!
Here’s my 2 cents worth: If the standard for a really good burger is fresh ground meat, hand-shaped and with some real heft to it, then I believe you need a bun that will stand up to it and hold it all together "in-hand." That’s why I prefer the Martins’s Potato Roll that we get nearly everywhere up and down the Atlantic coast. I think Arnold’s also makes a good potato flour bun as well. Like so many other food -related things, in the end it’s what your own personal preferences are that win out. [8D][8D]
