Beef enchiladas! I bought a pound of small chuck steaks and pot roasted them in 2/3 of a small can of low sodium v-8, one packet of Goya Sazon, some chopped onion and garlic and 1/2 can[attachment=Beef Enchiladas.jpg] of chopped green chilies. After the meat cooled I shredded it and mixed it with 1/2 package of softened cream cheese, a bunch of grated cheddar and the rest of the can of chilies ( I love green chilies). The enchilada sauce I like is Rick Bayless’ Frontera Grill Red Enchilada sauce. Sometimes I buy both the red and green sauce and make it Christmas style!
