You’re welcome! I made a bunch of changes because I didn’t feel like going to the store in the snow, ice, and cold.

1 1/2 pounds ground beef, browned with a tablespoon of bacon grease

1 whole onion (about 3/4 cup)

6 cloves garlic instead of a tablespoon minced

1 can black beans, 1 can chili beans (undrained)

1 (6 ounce) can tomato paste + 1 1/2 cups water instead of tomato sauce

For seasoning I used a packet of McCormick original chili seasoning, 1 tablespoon chili powder, 1 teaspoon smoked tomato seasoning, 1 teaspoon cumin, and 1 teaspoon Cajun seasoning.

The cheese I used is a “three state” blend. Wisconsin, Vermont, and New York cheddar.

To my bowl I added several dashes of Tapatio for heat.

Great recipe! Hmm, something for the weekend, perhaps. 🙂
