Paws you’ve stumbled upon an ongoing Wisconsin debate. If we’re eating as soon as the brats are done, I simmer first. If not everyone is ready to eat, I simmer with beer, onions and butter after. Everyone has their favorite brat which is why there are more than one brand out there. Mine are Miesfelds from Sheboygan http://www.miesfelds.com/ . Summer in Sheboygan find brat fundraisers pretty from spring until the snow falls most every weekend. The local free shopper will have them listed. I’m an IPA fan too but even Miller Lite will do in a pinch. Just don’t boil them.
