Pastina are ultra tiny bits of pasta. Smaller then rice or risotto. Growing up,this is how it what made me for me and how I make it today. Boil some water (I dont use a large pot or anything fancy), once at a boil, I add some chicken stock cubes, or if I had some homemade, I just boil that. Throw in the pastina, I look at how much it says on the box, serving wise, and just double it for me. Once cooked, I drain off 80% of the fluid, put the rest in a bowl. I like to put a bit of salt, fresh grated cheese and butter. Did I mention butter? lol. It really all depends on how I am feeling or want to feel. Sometimes when making with homemade stock I will forego the butter, have it more like soup and throw some escarole or fresh spinach in. It truly is the number one comfort food for me.
Once trying this you all may hate me or love me, cause I have to say, even when just pms’ing, pastina always hits the spot!!
