I like a complimenting flavor to my steaks and have experimented
greatly. I have no problem with a marinade, mine usually includes
woos, evoo, red wine, and montreal style seasonings.
I grill mine over charcoal with hickory chunks for smoke flavor.
And I don’t mind a sauce at all…my favorite commercial is
Heinz 57 for cheaper cuts, but I like to make my own with
the steak drippings while it rests. Butter, beef stock,
maybe a tad of grape jelly (secret ingrediant)…whatever else
catches my eye. I love Tabasco on steaks too.
