Years ago, at the Cheyenne Diner in NYC, the grillman put the tomatoes on the grill before they went into the sandwich, which made them good and toasty. Never had such a good grilled cheese and tomato sandwich since.
Avocado sounds good. Little slices, or spread on the bread?
