@pigiron, A good dose of Pappy’s reduced salt seasoning, some roasted garlic and sea salt from my new Costco grinder and a good dose of fresh ground black pepper.
Did you see the before pic at the top of this thread?
When I took off the fat cap after cooking I scrapped the remaining fat from the crispy outer layer and made a snack of that. It was fantastic! probably horribly bad for me but… It sure tasted good.
