JohnA is exactly right about the probe. In this case it is a sacrificial crooked neck squash with a Polder thermometer probe. I usually use a potato but all I have for potatoes are some really nice big baking taters that I didn’t want to waste. The God of BBQ does require a sacrifice though.
I didn’t take any pics of the chili later, it didn’t look any different. But it sure tasted good with some fresh cornbread.
I also cooked some Itialian sausage and baked some potatoes while the brisket was doing it’s thing.
Sorry it took me a couple days but I’ve been under the weather with a cold.
