I don’t believe height above appliances is a consideration here.  I’ve seen LP installations on pickups in the roof bay above the cab of pickups here.  So I’d check further on this, but don’t think it will be a problem.  Of coarse I think you know you need special tanks for horizontal use.  Good luck on your build!
