Made a tomato sandwich-type dish on Friday that was in the most recent issue of Real Simple. Slice a thin slice off the bottom of the tomato so it sits flat. Then slice it in half horizontally. Place in a pan cut side up and drizzled with olive oil, kosher salt, and thin garlic slices. Roast in the oven until soft, then sandwich a 1/2 inch thick slice of fresh mozzarella between the halves and let sit a few minutes. Use a good french bread to soak up the juices. Absolutely heavenly.
