Not sure to which ribs you’re referring, but I still have to agree w/ you. I almost never put sauce on my ribs while I’m smoking them! If I make sauce at all, it’s served on the side! I rub the ribs w/ a dry rub the night before, and smoke them for app 4-6 hours, using lump charcoal and a combination of oak, apple, and pear wood. Any sauce would only cover up the taste of the ribs. Of course, there are those "die-hards" out there who don’t think a rack o’ ribs is complete w/o a mountain of sickeningly sweet sauce. I think they’re the same people who think that McDonald’s makes a "great" hamburger, and actually like their "McRib" sandwich!
