The “front page” photo today of “Workingman’s Friend”, listed as “memorable”, is one of those smooshed, flat, crisped burgers. It doesn’t look that great to me. I guess that we have some friendly disagreement here……….
I share Glenn’s taste. The Workingman’s burger looks about as perfect as a burger can look to me; at least the patties do; not the toppings. I guess that’s where individual taste comes in. I’ve been discussing how much I like flat burgers on the Freddy’s thread. Every once in a while, I’ll have an 8-ounce burger somewhere. The burgers that go above 8 ounces don’t even tempt me. I have a strong preference for a couple pressed patties on top of each other.
And I agree with Glenn on smashing while raw. Places that know how to do it right don’t smash the juice out of the burgers. I’ve been to places that keep pressing the burgers after they’ve started cooking, and I don’t return to them.
I’d say my feeling on burgers is that if it’s too big for a regular burger bun to handle, it’s too big.
