If you’re going to boil dogs, use the 1/4 pans as follows:
1. 1 pan to cook dogs-high heat to boil
2. 1 pan to hold cooked dogs-reduced heat to hold
3, 1 pan with steam tray for buns-medium to high heat
4. 1 pan with steam tray: use small covered pans to hold condiments at temp after initial heating
Never transport your cart with a live propane bottle.
Determine the temperature of your internal cooler while the cart is fully operational. It should be at least 40 degrees. Keep your food and drinks in different coolers.
This is my cart. I have space for 3 full pans. I boil dogs and steam buns. I use two 1/2 pans for dogs. Front pan for holding and serving, rear pan for cooking. I use two full pans for steaming buns. To serve hot condiments, a small covered pan fits nicely on one of the steam trays with the buns.
