1.Put them in a hot box or cooler without ice, they will be fine.
2.As far as the steam pans go you will figure this out as you go. I promise you will not be using the same configuration a month from now that you are now…It just takes time to see what works best for you.
3.When I had a cart the cooler worked very well, it would keep ice for days but I have heard some dont. Keep the meat and perishables in the one on the cart if it will keep things cool and drinks in another, just don’t mix food and drinks.
The first few times will not run like clockwork because this is something new to you but it will all flow together and seem like you have done it forever. Good Luck…BTW What type of cart did you get?
