fatty,Sounds like your last tailgater was very good! Chorizo is a great thought. I’m sure you are able to get Jicama in "Jouershey". Peel and cut those delicious mexican tubers in the shape of a french fry, cover and toss with lime juice, then use the red chile shake mentioned earlier. No cooking(you may have noticed this trend in my suggestions). Always keep in mind fajitas, you can’t miss. Wings on the grill sounds great. Maybe whole "brick" cooked chickens with a side of spicy rice or cool taboulli. Don’t forget the diverse uses of bread, grilled. Bruschetti is versatile, delicious and easy.
With all that said fatty, if you would like an ORIGINAL tailgating experience, come see us in New Mexico. Friends and I have an authentic 1880’s ranch chuckwagon used during that era on cattle drives. Thats TAILGATING! You come down, bring friends, cook with our trail equipment and I’ll be delighted to sit back with a cerveza or two, coach you then enjoy your campfire meal and watch you wash the dishes.
