That is the same cart that we are currently using.  We just “remodeled it.  We added onto the original cart.  We clean the plexi with white vinegar in a trigger spray bottle and a soft paper towel (we use Bounty “pick-a-size” as napkins and as our regular paper towel on our cart).  The sneeze guard was originally designed to be removed for travel.  We would wrap the long pieces in a lightweight quilted material.  The short ends, we placed in the blue cold table sleeve.  The original sneeze guard was incorporated into the current design.

Outside “customer” side… that’s the front of the sneeze guard under the purple horizontal piece next to the serving window. The bottom of purple horizontal board was held to the top of the original sneeze guard PVC channel.
