Unfortunately, NC is enforcing NSF on all carts now.  They are basically giving any currently permitted cart 6 months from the date of the next inspection to conform to standard 59 or they will pull the permit for that cart.  My health department is currently working with the state to find ways for existing carts to remain permitted.  I got ahead of the game and purchased two new NSF carts this week.  If the older carts can be upgraded I will have four carts!
