I’ll do skirt steak on a screaming hot grill. Fast sear, keep ’em rare/med-rare. Let em sit 3-5 min, then slice thin & serve.

I second the skirt steak…great flavor and more "authentic". I usually just do chopped onion, cilantro, and lime juice. The traditional Mexican way.
