Salt & Smoke looks like I place I would certainly visit if I had a few weeks to spend in St Louis. However Since my last brief visit was 6 years ago and this was Sandra’s first visit we stuck to iconic St Louis BBQ…ie Snoots and Pork Steaks..
This pork steak from Big Mama’s BBQ Express in East St Louis IL will likely find itself on my top 10 list at the end of the year…

buffetbuster, I’ve been wanting to try a pork steak since my last visit back in 2011, but since my trip fell on labor day weekend, nothing was open. We went in broad daylight on a Sunday afternoon and this wasn’t right in the heart of East St Louis , but in an industrial area. Big Mama’s definitely has a huge local following. Their drive in/ take out window had a huge line of cars and they had a steady flow of customers for eat in service as well.
They do market and bottle their own sauce and although the pork steak was traditionally slathered in sauce, I was very impressed with the preparation of the pork steak itself, offering a very smoky flavor.
