It has been frequently said not to use garlic that has begun to sprout as it would be distasteful, but Jacque Pepin put the kabosh on that some time ago and said sprouted garlic is perfectly alright to use. I’ve used it ever since he said that and we’re still alive, and it still tastes good to us. I would trust Chef Pepin over most anyone else anytime.
