I hate to belabor this point because this recipie might be generational, regional and/or service specific. Look at the entry at Wikipedia, under creamed chipped beef. They call it SOS. God knows that they are not the end all or be all but it might be as simple as the difference between KC barbeque and North Carolina barbeque
