Idea:
Food process them finely. Use them as a coating for something deep fried.
And brainstorming based on the Bourbaine show that was on Osaka, JP:
flatten the fine processed skins out on a hot skillet, with some peppers, garlic, and drop some whipped eggs on top (70/30 skin to egg ratio), spatula it together into a small pancake while griddling to a golden brown ) think hash browns– served hot on a bun with a mellow spice/mayo and fresh lettuce, tomato, onion, etc. call it potato morning deluxe, aka some sort of euphimism.
OR NOW FOR SOMETHING COMPLETELY DIFFERENT:
Stack the skins in a pan, between layers of cheese, light meat mixture, and some egg mixture. Make a bake, or even a fusion quiche. Cut into rectangles and serve with sauce to go with your burgers and other sandwiches. Make it a mobile hash brown, cheesy, block.
