What makes the rural gumbo different from urban gumbo?

The deeper you get into Acadiana you start to see a few differences play out in the Creole vs Cajun gumbos.

 

It’s not uncommon to find tomatoes in Creole gumbo, you’ll never see a tomato in a Cajun gumbo.

 

Okra becomes more common in Cajun country.

 

The dice on the trinity is chunkier in the rural parishes.

 

The list goes on…..Creole or Cajun, you’re not going wrong either way, and if you had a hundred people make each version you’d have completely distinct gumbos.
