Ditto to everything, but I agree with the others who like a lot of fresh-ground pepper. I also over-salt.
I was the guy throughout high-school and college who was called upon to make late-night "B’s & G’s" for the guys. I learned how to make gravy from my mother, who always only used bacon grease, and I developed confidence in my gravy ability through frequent practice. When you can make a batch of biscuits and a great pan of gravy at 2 or 3 in the morning, totally drunk, you naturally think you know what you’re doing otherwise.
I will admit that I would usually just take Bisquik (sp?) and throw in some beer to make the biscuits at that hour, but the gravy was always made from scratch.
