Sometimes for a little extra flavor I’ll take a little bit of fresh diced onion (not specific as to color, variety, etc.) and fry it in the grease before adding the rest of the ingredients. I like mine with lots of sausage, too.
I have some cornmeal that’s been ground so fine it’s practically like flour. I wonder what kind of gravy it’d make…
