If I ever ran a 33% food cost at my old cororate place, I would lose my bonus, and get reprimanded. It does depend on the location. Downtown Denver I do run about 30% because the competion is everywhere. Outside of that I run 20% overall. I sell my grilled beef dogs for 2 bucks, they cost me about 35 cents with everything. Hawaiian Shaved Ice lol 3 bucks for 35 cents of product. This is at a softball/baseball concession stand and I am the only vendor allowed in the park. I charge four bucks for my giant grilled brats(1/3 lb) with onions and kraut on an outdoor roll. -seems expensive for a brat, but the size makes em worth it. 25 % food cost on that big ticket item lol. If you have some more expesive items, you don’t need the markup because its still more $ per sale.
