Now that’s good info Eddie & Rick. But like I stated the 3X markup was for FIXED STORES and that was from a friend in 1973 that went thru training for Churches Fried Chicken.
Hotdog stands are like Convenience Stores compared to Supper Markets, being in the right place and at the right time, the convenience to the customer is worth extra money. You can charge what the market will bear. But a 5X markup when you have competitors with lower prices across or just down the street is not likely to work. As you stated Eddy in downtown Denver your food cost goes up to 30% (3.3X markup) as you prices come down to compete with the other vendors and/or restaurants.
Rick, why keep the Sabrett on the menu? Unless they are a good seller, then why not raise the price to atlest the same as the Best Kosher?
