Um, I won’t say which one but one of our better known local chains routinely staffs with cooks from the local prison work-release program. I have no idea of the specifics of their arrangement, but usually they receive some sub-minimum payment that goes into their account at the prison, and I would assume that the prison gets a cut. Kind of like college work-study. It’s a plus for the inmates because they’re getting really good job training and these folks have the best shot at a placement once they get out. But I really wonder about the ethics of it.
