In a nutshell, Basque Cuisine is served family style. It comes in several courses including Salad, Soup, Beans, an entree (usually a Stew of some type) a Main Course, potato or pasta or both! and either flan, ice cream or traditional cheese and fruit for dessert. Usually a complimentary glass of Basque Wine is also served with the meal. Lamb and Mutton tend to be prevelant and everything appears to be infused with garlic.
I believe that the Basque who originally hail from Southern France and Northern Spain predominantly settled in Southern Idaho, Northern Nevada and Central California to work as Sheepherders like they did back in the old country.
